500g coconut yogurt
1 punnet of blueberries
1 orange cut into pieces
¼ cup of chia seeds
of Vanilla extract
2 Tbsp. of rolled oats
1 tbsp. of shredded coconut
1Tbs of pumpkin seeds
Pre-heat oven at 200 C to cook toppings
Combine coconut yogurt, chia seeds and vanilla extract in a mixing bowl
Stir well then leave the mixture for ten minutes until thickened.
Layer the blueberries , orange pieces and the coconut yogurt mixture into dessert jars.
cool in fridge until the pudding has set. This will take around one hour.
Place backing paper on a baking tray .
Mix coconut , oats and pumpkin seeds together, spread the mixture over tray.
Cook till golden brown then sprinkle over the chia dessert.
